Banana & Blueberry Loaf
I don't know about you but I love banana bread.
I did some experimenting and created a delicious banana and blueberry loaf - honestly so so good. This is perfect for afternoon tea, serve warm with melted butter, yum yum yum!
Supplement ingredients as you wish.
Ingredients
3 ripe bananas
3 whole eggs
2 Tablespoons of rice malt syrup
3 Tablespoons of coconut oil (melted)
1 teaspoon vanilla extract
180g Spelt flour
1 teaspoon of baking powder
a dash of cinnamon
2 Tablespoons of Chia Seeds
1/2 Cup of Blueberries
Method
Preheat the oven to 180C
Grab a large mixing bowl and add the banana and mash with a fork until there are no lumps.
Add in your egg, rice malt syrup, vanilla extract and coconut oil and then stir until combined.
Then add your dry ingredients (flour, baking powder, cinnamon & chia)
Stir until combined
Pour in your blueberries and gently fold through.
Grease a rectangle loaf tin using paper towel and coconut oil.
Pour the mixture into the tin.
Place the loaf in the oven for 50 minutes or cooked through the middle. You can check this by using a skewer and checking if it comes out clean.
Let cool and you're done!
Serve warm with melted butter on top, enjoy! x
